So we’ve had our ‘Second Monthly Surprise Dinner Party’ for our parents (Wow! That’s quite a mouthful!). ;) The theme was pistachios – hence the green. We served Creamy Penne with Pistachios and Asparagus, Pistachio-Encrusted Chicken Skewers with Blackberry sauce, and Caramelized Carrots. Dessert consisted of a delightful Lemon Mousse concoction over fresh blackberries. The special guests invited this month were our dear friends, Rob and Jill Fitzgerald. :D The Fitzgeralds arranged for a babysitter to watch their three young children while they spent the evening here. We had a great time with them, and the food was superb. Morgan was sorely missed as she was confined to her room with a bad cold.

Overall, it was a ’smashing’ success ( :) ), and we can’t wait for next time. Bon Appetit!
